What kind of wine is it?
Ca’ del Diavolo’s Franciacorta Brut is made from a blend of Chardonnay and Pinot Noir grown on the morainic hills of Franciacorta. Crafted using the Traditional Method, it expresses a fresh and balanced style, thanks to fermentation in stainless steel tanks at a controlled temperature and aging on the lees in bottle for at least 18 months. The resulting wine reveals a harmonious structure, with a fine and persistent perlage, able to enhance the local grape varieties and offer an immediate and versatile drinking experience.
Where does it come from?
This Franciacorta originates from the morainic hills south of Lake Iseo, in the province of Brescia—an area historically suited to viticulture. The vineyards, located at altitudes between 200 and 350 meters, are set on calcareous-clay soils of glacial origin, featuring excellent drainage and rich in stones. The continental climate with marked temperature variations supports the slow ripening of the grapes, resulting in intense aromas and balanced acidity.
How is it produced?
The Chardonnay and Pinot Noir grapes are hand-harvested in boxes at the perfect stage of ripeness and immediately undergo gentle pressing. The must ferments in stainless steel at 16°C to preserve aromatic freshness. The base wines are vinified separately by vineyard and then blended to create the cuvée. Secondary fermentation takes place in bottle following the Traditional Method, with aging on the lees for at least 18 months in cellars with a steady temperature, ensuring aromatic complexity and a fine mousse.
Tasting notes
In the glass, it displays a bright straw yellow hue and a fine, persistent perlage. The nose reveals white flowers, green apple, and light notes of bread crust from lees aging, with fruity nuances and a touch of minerality. On the palate, it offers balanced structure, lively acidity, and a citrusy trail, with a creamy mousse and a harmonious finish that maintains freshness and good length.
Food pairings
This Franciacorta is perfect as an aperitif and pairs well with fish dishes and white meats. It goes wonderfully with sushi, seafood crudo, lemon risotto, and sea bass carpaccio. Locally, in Brescia, it complements casoncelli alla bresciana with butter and sage. Also excellent with vegetable tempura and gratinéed seafood, thanks to its freshness and fine perlage, which highlight the delicacy of the dishes.
When to serve it
This Franciacorta should be served young to enhance its freshness and lively perlage, though its structure allows for brief cellaring. Best enjoyed within 3–5 years after disgorgement to fully appreciate its aromas and energy on the palate. The ideal serving temperature is between 8°C and 10°C, which will bring out its bouquet and guarantee a refreshing and enjoyable glass on any occasion.
