Description
Lambrusco di Sorbara Ancestral Method Re-fermentation by Gavioli is a dry sparkling wine made exclusively from Lambrusco di Sorbara grapes grown in the Nonantola area of Emilia. It represents one of the most authentic and traditional expressions of this grape variety, characterized by freshness, liveliness, and a strong local identity.
Vinification follows the Ancestral Method, with gentle pressing and fermentation at a controlled temperature. The secondary fermentation occurs naturally in the bottle thanks to residual sugars, giving the wine a fine perlage and a complex structure.
It displays a light red color with magenta highlights and a delicate froth. On the nose, it is fine and elegant, with hints of wild strawberries and bread crust. On the palate, it is dry, full, and complex, with a lively freshness that enhances its drinkability.
It pairs well with traditional Emilian dishes, particularly broth-based first courses, boiled meats, and roasts.
