Description
Carmes de Rieussec is a Sauternes produced in the prestigious Bordeaux area, on the left bank of the Garonne, where the natural humidity generated by the Ciron river encourages the development of Botrytis Cinerea, known as noble rot. The wine originates from the terroir of Château Rieussec, located between Fargues and Sauternes, on soils composed of gravel, sand and clay, and is obtained from Sémillon, Sauvignon and Muscadelle.
The grapes are pressed immediately after arriving at the winery and, after decantation, the musts are transferred into new barriques for fermentation. The parcels are vinified separately to preserve the identity of each batch; at the end of fermentation, the wines remain on the fine lees with regular bâtonnage, before blending and ageing in barriques for around twelve months.
On the nose, it reveals notes of candied apricot, citrus fruit and delicate floral hints, with a lovely aromatic intensity. On the palate, it echoes the richness of candied fruit, balanced by freshness and finesse, with a refined texture and a modern, elegant and harmonious profile.
It pairs perfectly with foie gras, blue cheeses, fruit desserts, citrus tarts and lightly spiced dishes.
