Description
Symphonie de Haut-Peyraguey is a Sauternes produced by Bernard Magrez from vineyards belonging to the Premier Grand Cru Classé Clos Haut-Peyraguey, located at the highest point of the Bommes plateau. The soils, typical of the Sauternes appellation, are composed of gravel, sand, and clay, providing ideal conditions for the expression of Sémillon, accompanied by a small percentage of Sauvignon Blanc.
The vineyard management follows sustainable viticulture principles, with great attention to grape quality and respect for the terroir. In the winery, the must undergoes a light clarification at a controlled temperature before fermentation, which can take place in one-year-old barriques or stainless steel tanks, depending on the characteristics identified during tasting.
In the glass, it shows a brilliant and inviting golden color. On the nose, it offers aromas of ripe fruit, apricot, honey, candied citrus peel, and delicate floral notes. On the palate, it is smooth, elegant, and enveloping, with balanced sweetness, freshness, aromatic finesse, and pleasant persistence.
It pairs well with foie gras, blue cheeses, fruit-based desserts, citrus tarts, and spicy oriental dishes.
