What type of wine it is
Oro Rosso Riserva by Cembra is a Trento sparkling wine Zero Dosage Vintage, produced in a Riserva version. It comes from a single variety, Chardonnay, and stands out for an elegant profile, consistent with the style of the classic production area.
Where it comes from
This sparkling wine is born in the prime vineyards of the classic area of the Cembra Valley, in the heart of Trentino Alto Adige.
How it is made
It is made exclusively with Chardonnay grapes, harvested only by hand between late August and early September. Gentle pressing is followed by cold static settling and fermentation at a controlled temperature. The wine ages on the lees according to the Traditional Method: 6 months in stainless-steel tanks and then 48 months in bottle, a long and distinctive path for a Riserva-style sparkling wine.
Tasting notes
The color is straw yellow, with a fine, dense perlage. On the nose it opens with refined aromas of ripe yellow fruit, followed by hints of barley and pastry. On the palate it is saline and pleasantly persistent.
Food pairings
Perfect as an aperitif, it also pairs well with appetizers and main courses based on white meats.
When to serve it
Serve at 8–10°C, in a tulip-shaped glass that enhances its fine perlage and aromatic complexity. Thanks to its structure and long time in bottle, it works both as an aperitif and throughout the entire meal; it is advisable to uncork it a few minutes before pouring, to allow the aromas to fully open.
