Made from Chardonnay grapes, it is defined by its Zero Dosage, which enhances the clean aromatics and precision on the palate. The bottle fermentation ensures great elegance. A prolonged aging process gives this Pas Dosé an enveloping structure and faithfully reflects the regional craftsmanship and style.

Where does it come from

This wine originates in the landscapes of Trentino, within its well-known regional denomination. Chardonnay is used, grown in vineyards at an average altitude of 600 meters above sea level. This geographical location distinctly shapes its production style. The mountain origin is vital to the identity of Trentodoc, offering the wine remarkable finesse and a bright clarity of sensation.

How is it made

Harvesting takes place by hand in the second half of August, allowing careful selection of the grapes. In the winery, the bunches are destemmed and the must is left to macerate on the skins for roughly twelve hours. The addition of yeast initiates fermentation of the base wine. In spring, the cuvée is bottled for secondary fermentation and undergoes lees aging for at least thirty months. The final disgorgement results in a wine of outstanding varietal purity.

The wine shows an intense straw yellow colour, enhanced by a fine and persistent perlage. The nose is compact and lively with notes of citron, lime, and green apple, seamlessly blended with refined yeasty aromas.
