Valdobbiadene Prosecco Superiore Extra Dry Dolceriva is a sparkling wine made exclusively from Glera grapes. Produced by Dolceriva, it stands out for its fresh and fragrant profile, achieved through a secondary fermentation in pressurized tanks using the long Charmat method. The absence of malolactic fermentation and the choice not to age the wine preserve its aromatic clarity, offering remarkable balance and a distinct structure for this style of sparkling wine.

Where it comes from

The grapes are sourced from the prestigious area of Guia di Valdobbiadene, at the very heart of the Valdobbiadene Prosecco Superiore denomination. The vineyards are located at an altitude between 300 and 400 meters above sea level, which enables a gradual ripening process that helps develop the wine's aromatic bouquet. The clay soil of the hills plays a key role in supporting the flavor profile and providing the pleasant sapid sensation on the finish.

How it is produced

The winemaking process begins with a strictly manual harvest, followed by a very gentle pressing to extract only the finest parts of the must. The sparkling process develops via the long Charmat method, with the wine remaining in pressurized tanks for 70 to 90 days. Before release, the wine rests for 45 days of maturation, a key period to stabilize the aromatic profile and preserve the original freshness of the fruit.

On the nose, it delivers intense acacia flower aromas, interwoven with clear fruity nuances of apple, lemon, and grapefruit. The palate is smooth and balanced, characterized by a clearly defined prominent fruit component.
