What kind of wine it is
Valpolicella Ripasso Superiore is a red wine made from a blend of Corvina, Corvinone, Rondinella and Croatina, characterized by re-fermentation on the Amarone pomace, which lends it structure and depth.
Where it comes from
The grapes come from selected vineyards in the sunny hills of Verona. The wine is crafted by Colognola ai Colli.
How it is made
After careful selection of the grapes in the vineyard, gentle crushing and destemming follow, along with temperature-controlled fermentation for eight to ten days. The wine is then subjected to ripasso on the Amarone pomace, which promotes a second fermentation that enriches the tannic structure and aromatic profile. This is followed by malolactic fermentation and aging for about twelve to eighteen months in medium and large casks, plus at least six months of bottle rest.
Tasting notes
It shows hues of a vibrant garnet red with great intensity. On the nose, notes of red berries emerge, evolving toward ripe cherry. On the palate it shows great suppleness and a particularly full body.
Food pairing
Pairs with first courses with rich, flavorful sauces, roast or grilled game meats, and long-aged cheeses.
When to serve it
Its full body and substantial structure make it ideal for meals in the colder months and for social occasions. It is advisable to uncork it well before serving and pour at around 18°C, to allow its suppleness and aromas to fully emerge.
