Description
What type of wine it is
Livon’s Braide Alte, from the Gran Cru line, is a white wine made from a blend of Chardonnay, Sauvignon, Picolit and Moscato Giallo. It shows a straw-yellow color with golden highlights and a rich, harmonious, enveloping profile. Its style is that of a structured white, partly matured in wood and designed for aging.
Where it comes from
The grapes come from the Braide Alte vineyard, in Ruttars, Dolegna del Collio, in the province of Gorizia. The soil consists of marl and sandstone, known in the local dialect as Ponca, typical of the Collio hills. The vines are trained to reverse Guyot.
How it is made
The harvest is carried out entirely by hand. After gentle destemming and cold maceration in the press, the must is clarified by decantation and ferments at a controlled temperature. Part of the fermentation takes place in oak barriques, where the wine ages for eight to ten months. This is followed by blending in stainless steel tanks and about a year of maturation in bottle before release.
Tasting notes
The nose opens with floral notes that give way to hints of fresh fruit, vanilla and spices. On the palate it is rich, harmonious and enveloping, with marked structure and great elegance. The finish is long and persistent.
Food pairings
It pairs seamlessly with seafood pastas and risottos, shellfish, salt-baked sea bass and gratinéed scallops. It also works well with beef carpaccio, braised rabbit, spit-roasted larded chicken and oven-roasted kid with vegetables.
When to serve it
This is a white suited to special-occasion lunches and dinners, where full-bodied, characterful wines are called for. It has a long aging potential, between ten and fifteen years, and is well suited to cellaring.
