Description
What kind of wine is it
Dolceriva Pinot Noir Spumante Rosé Extra Dry is a rosé sparkling wine made from Pinot Noir grapes, defined by a fresh, fragrant and pleasantly soft style. Secondary fermentation using the Charmat method enhances the grape’s aromatic profile and keeps the wine lively and immediate, with fine bubbles and a balance of freshness, a touch of salinity, and a delicate fruit note. The Extra Dry dosage lends a rounded, approachable sip.
Where it comes from
The Pinot Noir from Dolceriva originates in Veneto, from vineyards selected to best express the character of this red-skinned variety. The grapes are harvested at optimal ripeness to preserve freshness and aromatic integrity—key to an equilibrated, fragrant sparkling wine. Vineyard work and grape selection help retain a good fruit component, ideal for the subsequent sparkling process.
How it is made
Vinification is carried out with special attention to preserving freshness and varietal aromas. The grapes are handled gently and the must ferments at controlled temperature. The prise de mousse takes place in pressurized tanks according to the Charmat method, which preserves the Pinot Noir’s fragrance and yields a fine, pleasant sparkle. After the refermentation, the wine is prepared for bottling, maintaining its youthful, immediate character.
Tasting notes
Visually, it shows a bright, pale pink hue, enlivened by a fine, persistent perlage. The nose offers delicate aromas of red fruits, recalling strawberry and small wild berries, with floral nuances and a pleasant fragrance. On the palate it is fresh and soft, with good acidity that supports the fruit and makes for an easy-drinking sip. The Extra Dry profile adds roundness and a pleasantly balanced feel on the finish.
Food pairing
This sparkling wine is particularly well-suited to an aperitif, pairing nicely with delicate cured meats, finger food and vegetable-based nibbles. It also pairs easily with fish and shellfish, light first courses, white meats and gourmet pizzas. Its softness makes it suitable for slightly spiced dishes and for fresh or semi-aged cheeses.
When to serve
Dolceriva Pinot Noir Spumante Rosé Extra Dry best expresses its young, fruity and fragrant character when enjoyed within the first few years after bottling. This is a sparkling wine designed to be appreciated for its freshness and immediacy rather than for long ageing. It is best served well chilled, around 8 °C, to highlight its red-fruit aromas, lively bubbles and pleasant softness.
