The success of spirits derived from wine, such as Brandy, and from grape pomace, such as Grappa, led to the discovery that ageing in wooden casks significantly improved their quality. Since then, many spirits have been aged in barrels for extended periods, enriching their aromas and refining their harmony. A different experience unfolded in northern countries, where the climate did not favour viticulture. Instead, the available raw materials were fruits rich in fermentable simple sugars, leading to the production of eaux-de-vie from plums, pears, cherries, apricots, and apples, such as Calvados. Agriculture in these regions also provided cereals and potatoes, rich in starch, which, after proper processing, could be fermented and distilled into Whisky, Gin, and Vodka. In the tropical regions of the New World and the Caribbean, sugarcane became the primary ingredient for producing Rum, while in Central America, the heart of the agave plant was used to create Tequila.
Wherever in the world they are made, the essential stages of producing these "waters of life" remain the same: preparing the mash from raw ingredients, fermentation, distillation, and final stabilisation—often followed by barrel ageing. The success of a great spirit depends not only on the quality of the raw materials but also on the skill and experience of the distiller, the methods used, the precision of the distillation process, and the type of still employed.
