Description

Vigna Casalj wine comes from the vineyards of Tenuta Rapitalà, in the Palermo wine-growing areas.

It is produced entirely with Catarratto di Montagna grapes, harvested in late September. To preserve the varietal aromas, contact with oxygen is limited, keeping the atmosphere controlled during all stages of the winemaking process: soft pressing, cold static settling and fermentation at low temperature 12-14 ° C with selected yeasts. The temperature control allows to prolong the fermentation for over 2 weeks. Analytical checks are daily. The wine is kept on the lees until March, but not before making a passage of 3 months in 50 hl barrels, of French oak.

It has a light golden yellow color. The barrel passage greatly amplifies the olfactory component, with Mediterranean aromas of sage, tomato leaf and caper flower that dominate the scene. In the mouth it shows a round and satisfying body, with good freshness and minerality.

Perfect in combination with fish and shellfish, ideal to accompany white meats.
