Description
The Alta Langa Diavoletto from Casa E. di Mirafiore is a sparkling wine made with 70% Pinot Noir and 30% Chardonnay from vineyards located in Serralunga d'Alba. These east-facing vineyards, situated at an altitude of 250-300 meters above sea level, are characterized by soils made up of white clays interspersed with layers of calcareous sands, giving the wine particular complexity and structure.
After harvesting in small crates, the grapes are immediately taken to the winery and subjected to a gentle and delicate pressing. The must is then transferred into temperature-controlled tanks for 24-hour decantation. Then, fermentation begins in steel tanks at temperatures between 18 and 20°C for about 20 days. The wine rests on its lees until the following spring, when it's ready for a second fermentation in the bottle, followed by 36 months of maturation on the lees in a cool, dark environment, according to the traditions of the Metodo Classico.
In the glass, it has a straw yellow color with slight golden reflections and fine, persistent perlage. Aromas of white-fleshed fruit, dried fruit, and bread crust are enhanced by the creaminess of the mousse. On the palate, the structure of the Pinot Noir is immediately perceived, with a long finish, freshness, and excellent savoriness that linger on.
Ideal to serve as an aperitif or to accompany refined fish and shellfish dishes.
