The process involves manual harvesting followed by a slow drying in the fruit loft. This practice concentrates the aromas and gives the wine its typically rich profile. The use of barrels defines a full-bodied structure, resulting in a smooth and well-balanced glass.
Where it comes from
The grapes are grown in the vineyards of the Valpolicella Classica, set on distinctive dry-stone terraces. The vines grow at an altitude between one hundred and fifty and four hundred and fifty meters above sea level, an exposure that encourages the development of the clusters. The loam-clay soils ensure a proper water supply to the plants and endow the must with rich polyphenols. This hilly environment is key to providing balance and concentration to the final product.
How it's produced
The grape bunches are hand-selected between September and October, then rested in the fruit loft until January. Once the drying period ends, the must undergoes thirty days of skin maceration with temperature-controlled fermentation and regular punch-downs. Malolactic fermentation introduces the maturation phase, which takes place in Slavonian oak barrels for twenty-four months. A subsequent bottle aging of at least six months completes the development before tasting.
Tasting notes
In the glass, it reveals a deep intense ruby red color enriched by clear garnet highlights. The nose displays well-defined aromas of marasca cherries in spirit and dried plums, intertwined with hints of dark spices. On the palate, it unfolds a dense and enveloping volume, supported by polished tannins. The sip stands out for its full body and a harmonious finish that offers a consistent and lingering aftertaste.
