Description

What type of wine it is

Amarone della Valpolicella Classico by Corte Bravi is a full-bodied red wine crafted from a wise blend of Corvina Veronese, Corvinone, Molinara, and Rondinella. This label fully expresses the tradition of grape drying, a method that gives the wine exceptional aromatic intensity. The spontaneous fermentation with native yeasts and the meticulous care in the cellar result in a full and persistent sip. Extended maceration and perfectly timed aging guarantee an enveloping taste profile that faithfully introduces the Veronese territorial character.

Where it comes from

The roots of this Amarone della Valpolicella Classico lie in the vineyards of Gargagnago, located in the province of Verona. This specific origin identifies the most traditional and historically rooted area for local viticulture. The Classico designation signifies a strong bond with the terroir of origin, characterized by a hilly environment ideal for grape ripening. Its geographical identity is clearly reflected in the glass, showcasing a full expression of the fruit and a firm structural concentration.

How it is produced

After a careful selection, the grape bunches rest for three months in wooden crates for the drying process. This is followed by crushing and a ten-day cold maceration in preparation for the subsequent spontaneous fermentation with native yeasts. A second warm maceration optimizes the extraction of noble components before the wine ages for three years in French oak barrels. Bottling is carried out without any filtration, allowing the liquid to complete its development with a further year of rest in glass.

Tasting notes

In the glass it displays a ruby red color, enriched by garnet reflections resulting from extended aging. The nose offers intense aromas of dried plums and hints of cherries in spirit, well balanced by touches of spice and a distinct note of chocolate. On the palate, the entry is warm and substantial, marked by a firm yet lively structure. The taste is defined by soft and elegant tannins, which guide the progression towards a harmonious and persistent finish.

Food pairings

The complexity of this wine makes it an excellent choice for dishes with intense flavors. It finds perfect balance alongside substantial red meat preparations, enhancing the structure of hearty braises and rich stews. Its smooth organoleptic profile also pairs harmoniously with platters of aged cheeses, thanks to its spicy nuances. It's an ideal glass for complementing elaborate traditional recipes, bringing a sense of fullness to every gastronomic pairing.

When to serve it

This intense Venetian red wine reveals its character best during special convivial occasions and goes perfectly with richer courses. It's also well suited to contemplative enjoyment, where a leisurely pace can reveal its full evolution in the glass. Allowing ample time helps to release its sweet and spicy nuances that enrich its aromatic profile. Thanks to its robust technical foundation, it’s ready to drink now, while also possessing remarkable potential for extended cellar aging.
