Description

Barbera d'Asti by Cascina Valle Asinari is a red wine produced exclusively with Barbera grapes grown in the Asinari Valley, in San Marzano Oliveto, Piedmont. The Barbera vineyards are located 300 meters above sea level with southern exposure, on sandy and loamy soils.

The vinification begins with a spontaneous fermentation of about 12 days in cement tanks, using only indigenous yeasts. The wine is then drawn off and pressed before returning to the cement tanks to complete the malolactic fermentation. The refinement then takes place in a large Slavonian oak barrel of about 50 years of age, giving greater complexity and structure without losing freshness.

It has a purplish ruby red color. The bouquet is particularly seductive, with notes of fragrant fruit and a minty spiciness. On the palate it is elegant and rounded, with a full body and a notable structure.

This Barbera d'Asti pairs perfectly with roast meat dishes, pasta with ragù and mature cheeses.
