How it's made

Vinification begins with a cold pre-fermentation maceration of the Cabernet Sauvignon and Cabernet Franc grapes, ideal for optimizing extraction and aroma definition. The process continues with fermentation carried out by native yeasts, strictly temperature controlled. After this phase, the wine rests for fourteen months in new barriques and acquires a distinctive, well-integrated oak note. A further twelve months of bottle aging allows for the aromas to stabilize and the tannic structure to be perfected.
