Description
What kind of wine it is
Cuvée Saint-Vincent by Vincent Girardin is a red wine produced in Burgundy from 100% Pinot Noir grapes. It ferments in temperature-controlled stainless steel tanks and continues its maturation with prolonged aging in partially new wooden barrels, which help define a precise structure. On the palate, the profile is smooth and balanced, with good intensity and velvety tannins, designed for a clean and consistent drinking experience. The characteristics shaped by the production style naturally guide you towards the origin, the winemaking process, and the distinct sensory notes.
Where it comes from
The grapes come from vineyards about thirty-five years old, located in the heart of the Côte de Beaune, an area historically suited to Pinot Noir cultivation. The rows are planted in clay and limestone soils, a typical local combination that helps create a sharp balance between structure and precision. The geographic context of Burgundy allows the wine to be interpreted through the grape variety’s expression in its reference environment. The identity of the place steers the style towards restrained intensity and an extremely even tannic texture.
How it is produced
Hand harvesting involves strict selection of the bunches, assisted by an optical sorting table to enhance the accuracy of sorting. After crushing and destemming, the must is obtained and directed to steel fermentation with careful temperature control, enabling a technical management of the process. Once this phase is completed, the wine is aged in partially new wooden barrels for at least fifteen months. This process results in a red wine with a composed character, balanced towards precision and consistency.
Tasting notes
In the glass, it shows an intense ruby red color, a sign of good concentration and fruit integrity. On the nose, it offers a vibrant profile of red and black fruits, with clear hints of blackcurrant, raspberry, and strawberry that create an immediate and recognizable aromatic character. The entry on the palate is soft and balanced, with well-measured intensity supporting the development without ever making the sip rigid. The tannic texture is velvety and contributes to a composed and very consistent finish, true to the character of Pinot Noir.
Pairings
This red pairs beautifully with red meats, poultry, and aged cheeses, enhancing dishes characterized by succulence and savoriness. Its smoothness and velvety tannins make it suitable for structured main courses, complementing the dishes without overwhelming delicate fruity notes. True to local traditions, it’s a perfect match for boeuf bourguignon, the region’s signature dish, harmonizing with the wine’s balance. It’s also recommended with rich poultry preparations and with aged cheese platters, where its lasting flavor provides an effective counterpoint.
When to serve it
This is a red wine suitable for meals where balance, softness, and measured structure are appreciated, ideal from traditional Sunday lunches to meat-based dinners. The extended aging in wooden barrels gives it a well-defined structure, allowing it to be fully enjoyed when a composed, consistent profile is desired. Its good flavor intensity makes it appropriate for richer courses, ensuring enjoyable drinkability from the beginning to the end of the meal with its reliable and versatile presence.
