Louis Jadot's Chablis Fourchaume is a white wine from Burgundy made from Chardonnay grapes. Its style stands out for its distinct freshness and evident mineral structure, which together create an ideal balance between precision and volume on the palate. The winemaking technique skilfully combines fermentation in stainless steel tanks with a calibrated period in wood, a process that allows the wine to acquire a pleasant aromatic complexity without sacrificing its natural tension.
Where does it come from?
This white wine comes from a Premier Cru vineyard located in the northern part of Burgundy, exactly halfway between Dijon and Paris. The area enjoys a continental climate where significant temperature variations enable the grapes to ripen slowly, thus preserving their vitality. The region's characteristic marly limestone soils give Chablis its distinctive identity, offering a tense structure and unmistakable tasting sensations.
How is it produced?
After a careful harvesting phase, the must is processed in two separate and complementary ways. Part of the juice ferments in oak barrels made by the Cadus cooperative, while the remaining portion is vinified and aged in stainless steel tanks. The process involves an average resting period of thirteen to fifteen months on its own fine lees before final bottling, a choice that gives the wine greater structural roundness and excellent integration.
Tasting notes
To the eye, the wine shows a bright straw yellow hue. The bouquet reveals a measured aromatic complexity led by clear citrus notes and delicate white flowers, enriched by hints reminiscent of flint. On the palate, the lively acidity typical of the denomination is confirmed, able to support the development of fruit and mineral notes in a balanced way. The sip ends with a long and clean finish, leaving a persistent and pleasant savory trail.
