Besserat de Bellefon's Champagne Blanc de Noirs Grand Cru is a Champagne made from pure Pinot Noir, conceived for a powerful, complex profile that remains lively and precise. This cuvée belongs to the house’s “Explosion of Aromas” line, integrating intensity and freshness into a vibrant taste structure. Vinification is designed to enhance the finesse of the mousse and clarity of aromas, with extended aging on the lees.
Where does it come from
It comes from the Champagne region with a selection of Pinot Noir from Ambonnay, Bouzy, Mailly-Champagne, and Verzy, four villages classified as Grand Cru. This origin gives rise to a Blanc de Noirs that centers on structure, depth, and lively taste progression, in line with the house style. The wine’s regional identity is expressed in the balance between intensity and tension, supporting its aromatic complexity and sense of freshness.
How is it produced
Production follows Besserat de Bellefon tradition, with secondary fermentation in bottle according to the Traditional Method. Since 1930, the house has used a lower addition of liqueur de tirage to achieve a finer, creamier mousse. Malolactic fermentation is not carried out, in order to preserve tension and aromatic purity. After secondary fermentation, the wine ages for six years on the lees and rests for at least six months after disgorgement, completing its integration and roundness on the palate.
Tasting notes
Visually, it displays deep, intense copper hues, typical of a characterful Blanc de Noirs. On the nose, it is aromatic and complex, with exotic notes and reminders of damson plum on a broad, multifaceted texture. On the palate, it is vibrant, energetic, and savory; the freshness is well-sustained and keeps the sip dynamic. Citrusy notes of grapefruit accompany the taste progression and underline the balance between intensity and tension.
What to pair it with
At the table, it elegantly accompanies rich main courses like braised pork fillet, where the structure and savoriness complement the succulence of the meat. It is also ideal with tournedos Rossini with porcini mushrooms, thanks to the aromatic complexity and citrus drive, which lighten the persistence. Its dynamic taste makes it suitable for important, celebratory dishes.
