Description

What kind of wine is it

The Champagne Blanc de Blancs Brut by Mademy is a refined wine produced in the French wine region exclusively from Chardonnay grapes. This cuvée is born from the first pressings and includes a careful selection of reserve wines that provide balance and depth to the flavor profile. Its production strictly follows the principles of the Traditional Method to ensure an elegant character and a clean, linear sip. The fresh and harmonious touch defines the style of the winery and offers a distinct and balanced tasting experience.

Where does it come from

The grapes come from renowned terroirs located in the Montagne de Reims and Vallée de la Marne. The choice to focus on these two specific areas establishes an approach oriented toward precision and expressive purity that preserves the typical character of Chardonnay intact. The use of reserve wines in the blend ensures a profound continuity of taste over time and refines the wine’s structure. These geographical origins consistently trace the sensory profile and technical style of the cuvée.

How is it made

The base is obtained from the finest musts derived from the first pressings. Vinification continues in stainless steel tanks with slow alcoholic fermentation at low temperatures to preserve the clarity of the aromas. Subsequently, the completion of malolactic fermentation imparts a rounded texture to the liquid. Finally, according to Traditional Method practices, the wine matures in cellars at a constant temperature while resting on the lees for a period between twenty-four and thirty-six months.

Tasting notes

On the eye, it shows a straw yellow color with golden hues, the result of prolonged aging on the lees. The nose reveals delicate aromas of yellow fruits with clear hints of peach and apricot, enhanced by mineral notes and citrus nuances of lemon and grapefruit. On the palate, the attack is rounded and well-defined, evolving into a fresh, linear, and harmonious sip. The development in the mouth maintains excellent precision and finishes with a clean and balanced aftertaste.

Food pairings

This wine is ideal as an aperitif and pairs well with seafood dishes where freshness and delicacy stand out. The citrus notes complement truffle scallops and balance the tender flesh of turbot fillet or shellfish. Following French tradition, it pairs consistently with oysters and forms an exquisite match with classic cheese Gougères. This savory choux pastry recipe enhances the linear sip and minerality of the cuvée.

When to serve

It is the recommended Champagne for convivial moments that call for an elegant and refreshing glass, from the beginning of the evening through seafood meals. Its Brut style makes it suitable for occasions when a clean taste is desired to accompany food consistently. Thanks to its long ageing, it pours with perfectly balanced maturity. It is the ideal choice for seafood dinners, as it constantly offers a balance between initial smoothness and prolonged freshness.
