Champagne Eurêka! by Chavost is a Brut Nature produced from Chardonnay and Meunier grapes. Made according to strict organic farming principles, this sparkling wine maintains an extremely dry and precise style. The vinification aims to enhance the freshness and aromatic definition of the fruit and excludes the use of sugar dosage. The artisanal approach in the cellar reflects a philosophy focused on purity and the authentic expressiveness of the raw material, resulting in a tense and linear glass.

Where it comes from

The grapes are sourced from the vineyards of Chavot-Courcourt, located in the heart of the Champagne region. This area is deeply linked to the ancestral name Chavost, an ancient historic village between the church of Saint-Martin and the hill of Mont-Félix. The vines sink their roots into a clay-limestone terroir characterized by a peculiar northern exposure. This geographic and geological combination is essential to support the gustatory tension and natural aromatic finesse that define the winery's style.

How it is produced

The process begins with the extraction of the first-run juice, known as the cuvée, obtained from the very first pressing. Champagne is crafted according to the Méthode Champenoise, with spontaneous alcoholic fermentation triggered exclusively by indigenous yeasts. The subsequent prise de mousse in the bottle also happens completely naturally, with no sugar added, keeping true to the Brut Nature profile.
