Where it comes from
The grapes are sourced from the vineyards of Chavot-Courcourt, located in the heart of the Champagne region. This area is deeply linked to the ancestral name Chavost, an ancient historic village between the church of Saint-Martin and the hill of Mont-Félix. The vines sink their roots into a clay-limestone terroir characterized by a peculiar northern exposure. How it is produced
The process begins with the extraction of the first-run juice, known as the cuvée, obtained from the very first pressing.
