Description
What kind of wine it is
Les Moineaux by Minière F&R is a Champagne Blanc de Blancs made exclusively from Chardonnay sourced from the Montagne de Reims. Classified as Champagne, it is a Brut Nature focused on aromatic purity, acidic tension and mineral precision, with a fine texture and precise progression. Vinification in wooden barrels supports the structure and complexity while preserving the varietal freshness. The process follows the traditional Champenoise Method with a secondary fermentation in the bottle and prolonged lees aging, leading to an elegant and dry profile—ideal for conscious enjoyment and attentive service.
Origin
The grapes come from the "Lieu-Dit Les Moineaux" in the Montagne de Reims, an area of the Champagne region characterized by a mosaic of plots and a cool climate. This zone is influenced by moderate temperatures and slow ripening, factors that favor natural acidity and fruit definition. Minière F&R is based near Hermonville and has operated with a traditional and nature-respectful approach since 1919. Here, the use of historic vineyards and attentive management result in a style focused on precision and finesse, expressing a clear sense of place—especially noticeable in the distinct savory notes.
Production method
The raw material is Chardonnay, harvested from vines over fifty years old. Vinification takes place in wooden barrels, managed to preserve purity and provide wine structure. As it follows the rules of the Champenoise Method, aging on the lees in the bottle lasts five years to allow full integration of aromas, texture definition, and great persistence. No final sugar dosage is added, a distinctive feature of Brut Nature that emphasizes the dry profile and aromatic consistency, offering a sip with composed and linear structure.
Tasting notes
Visually, it shows a bright color, enhanced by a fine and persistent perlage. On the nose, it offers a subtle and precise profile, displaying aromas of citrus, white flowers, and a distinctive note of toasted almond resulting from barrel aging and prolonged lees contact. On the palate, it opens fresh and vibrant, with clear flavors of lemon and green apple joined by a mineral touch that guides the tasting progression. The finish is essential and dry, in line with the formal rigor of its type, guaranteeing a savory and very clean finish.
Food pairings
The wine’s pronounced verticality and absolute dryness pair naturally with seafood dishes, starting from fresh oysters to raw fish, where the citrus notes clean and refresh the palate. The absence of dosage and subtle minerality enhance refined preparations that exalt the ingredient, without ever overpowering its flavor. It pairs harmoniously with classic sole meunière, thanks to its dry finish. It is also ideal with seared scallops, allowing the wine’s toasty hint to complement the delicate sweetness of the shellfish.
When to serve it
This Champagne is perfect when a dry and precise style is desired, making it an excellent choice for strict aperitifs and to accompany an entire seafood meal. Thanks to the vinification in barrels and long lees aging, its solid structure requires careful serving to enhance all its nuances. It’s a bottle suited for light dinners, emphasizing raw seafood and shellfish thanks to its palate-cleansing clarity. Its undosed nature offers a direct, genuine sip—perfect for those who appreciate elegance without residual sugars.
