Description
What kind of wine it is
Les Moineaux by Minière F&R is Champagne Blanc de Blancs made exclusively from Chardonnay sourced from the Montagne de Reims. Classified as Champagne, it is a Brut Nature built on aromatic purity, acid tension and mineral clarity, with a fine texture and precise progression. Fermentation in wooden barrels supports structure and complexity while preserving varietal freshness intact. The process follows the traditional Méthode Champenoise with secondary fermentation in bottle and extended ageing on the lees, shaping an elegant, dry profile that suits mindful drinking and attentive service.
Where it comes from
The grapes come from the lieu-dit Les Moineaux in the Montagne de Reims, an area of Champagne characterized by a patchwork of parcels and cool conditions. This zone is marked by restrained temperatures and slow ripening, factors that favour natural acidity and clear fruit definition. Minière F&R is based near Hermonville and has worked with a traditional, nature‑respectful approach since 1919. In this context, the use of historic vineyards combined with careful management is reflected in a style focused on precision and finesse, able to convey a clear sense of place, most evident in its pronounced saline streak.
How it is made
The raw material is Chardonnay harvested from vines over fifty years old. Vinification takes place in wooden barrels, with a focus on preserving cleanliness and providing structure to the wine. In keeping with the Méthode Champenoise, ageing on the lees in bottle lasts five years to promote full integration of aromas, definition of the weave and long persistence. No final dosage is added, a hallmark of Brut Nature, which emphasizes the dry imprint and aromatic consistency and delivers a sip with a composed structure and linear profile.
Tasting notes
In the glass it shows a bright colour, highlighted by a fine, persistent bead. On the nose it offers a restrained, clean‑cut profile, outlined by citrus and white‑flower aromas and a distinctive toasted‑almond note stemming from the barrel work and long lees ageing. On the palate the entry is fresh and lively, with crisp flavours of lemon and green apple alongside a mineral nuance that guides the palate’s progression. The finish is essential and dry, in keeping with the style’s formal rigour, and delivers a saline finish that is highly orderly.
Food pairings
This wine’s linear, vertical frame and absolute dryness naturally pair with seafood dishes, starting with fresh oysters and raw fish, where the citrus notes cleanse and refresh the palate. The absence of dosage and the subtle minerality enhance refined preparations that showcase pristine ingredients without ever overpowering their flavour. It harmoniously accompanies a classic sole meunière, thanks to its dry progression. It is also ideal with seared scallops, allowing the wine’s toasty hint to play with the mollusc’s delicate sweetness.
When to serve
This Champagne is suited to moments when a dry, well‑defined profile is desired and proves a sound choice for no‑nonsense aperitifs and for accompanying an entire seafood‑based meal. Thanks to barrel vinification and long lees ageing, its solid structure calls for attentive service to highlight its nuances. It is a bottle to open at light dinners, to elevate crudo and shellfish with its palate‑cleansing precision. Its zero‑dosage nature offers a direct, sincere drink, ideal for those who appreciate elegance.
