Description

What kind of wine is it?

Champagne Extra Brut Jouvence by Françoise Bedel is made from a blend of Chardonnay, Pinot Meunier, and Pinot Noir. This wine combines freshness, savoriness, and a creamy texture, outlining a rich yet well-defined profile. The base wine ferments in steel with partial malolactic fermentation, followed by the secondary fermentation in the bottle according to the Traditional Method. The overall style proves elegant, supported by a distinctive marked minerality and a long-lasting finish on the palate.

Where does it come from?

The grapes come from vineyards grown on soils with a highly articulated profile. The presence of clay, silt, marl, and limestone defines a complex pedological environment, giving the wine precision and depth. In particular, the limestone matrix contributes a pronounced mineral sensation and gustatory tension, while the earthy fractions support the roundness of the sip. The characteristics of the terroir impart a structured character to this Champagne and maintain an excellent balance between fruit ripeness and freshness.

How is it made?

After a careful harvest, the must ferments in stainless steel containers to preserve maximum aromatic clarity. Part of the batch undergoes malolactic fermentation, an oenological practice that modulates acidity and adds smoothness without compromising liveliness. The sparkling process is activated by a bottle refermentation, following strictly the Traditional Method. This is followed by a long and meticulous aging on the lees lasting nine years, a crucial step that favors the integration of the fine perlage and an enveloping texture.

Tasting notes

In the glass, it shows a bright golden yellow color, threaded by fine and persistent bubbles that attest to its long cellar aging. The aromatic profile opens with distinct scents of yellow-fleshed fruit, then evolves toward delicate hints of cinnamon and nuances of dried fruit in a well-layered bouquet. On the palate, the entry is delicate, fresh, and distinctly savory, supported by a creamy texture. The lengthy taste persistence leaves a clean and harmonious finish and pleasantly invites another sip.

Food Pairings

The notable complexity of this Champagne makes it particularly suitable to accompany refined fish starters, where its freshness and savoriness enhance delicate preparations without overpowering them. It pairs effectively with steamed shellfish, as its structured body refreshes the palate and highlights the natural sweetness of the meat. Its gustatory balance makes it an ideal choice even for important first courses. It expresses itself best when served with a creamy risotto, creating a perfect aromatic continuity.

When to serve it

This Champagne fits perfectly on occasions when a precise and rewarding drinking experience is desired, capable of accompanying the entire meal. Its complex structure, shaped by the long maturation period, makes it ready and enjoyable from the moment it's opened and delivers a complete expression. Served at the ideal temperature, it highlights both the finesse of the effervescence and the aromatic clarity. Thanks to its intrinsic characteristics, it also has a natural propensity to evolve in the bottle, maintaining its depth over time.
