Description
The Champagne Blanc de Blancs of Ayala is produced only in exceptional vintages, exclusively from Chardonnay grapes from the best Grand Cru vineyards of the famous Côte des Blancs region: Chouilly, Oiry, Cramant and Vertus. After a classic vinification in white, the second fermentation takes place by refermentation in the bottle, according to the Champenoise Method, with aging for 6 years on its lees.
Ayala's Blanc de Blancs Champagne shines in the glass of a beautiful bright pale yellow color, with an abundant foam and a fine and persistent perlage. The nose enchants with a delicate and inviting bouquet, with notes of white flowers and citrus, enriched by elegant hints of honey and frangipani. On the sip it follows the sensations perceived by the nose, proving full and balanced, with a consistency similar to velvet.
Superfine together with sea carpaccio and fish in general, it lends itself very well to becoming a refreshing and refined aperitif.
