What kind of wine is it
Pèppoli by Antinori is a Tuscan red wine classified as Chianti Classico, originating from a blend of Sangiovese, Merlot and Syrah. It undergoes fermentation in temperature-controlled stainless steel tanks with maceration to maintain a clean and defined profile. Maturation in large Slavonian oak barrels, combined with a small part in barriques, supports its balanced style. It stands out for its good structure and easy drinkability, characterized by smooth tannins and a noticeable savoriness.
Where does it come from
This red originates from the vineyards of the Tenuta Pèppoli managed by Antinori, located in the vibrant heart of Chianti Classico. The connection with the territory of origin allows the grapes to develop an authentic and well-defined character. The local environment helps preserve the freshness and aromatic definition of the grapes, ensuring the wine has a distinctive flavour profile and a natural structural balance.
How is it produced
The Sangiovese, Merlot and Syrah grapes are carefully harvested in the second half of September. The alcoholic fermentation takes place in stainless steel at a controlled temperature between 26 and 28 degrees Celsius and includes skin maceration designed to extract colour and phenolic compounds. After the malolactic fermentation, the wine rests for about nine months in Slavonian oak barrels and, in a small proportion, in barriques before preparation for bottling.
Tasting notes
On the eye it presents a bright ruby red colour, enlivened by slight violet hues that reflect the vinification in steel and the restrained ageing in wood. The nose reveals intense violet aromas, followed by cherry and raspberry notes, accompanied by light smoky nuances resulting from the barrel ageing. On the palate, the ensemble is harmonious and balanced, led by silky tannins and a pronounced savoriness that supports the wine’s progression and makes the sip smooth and precise.
Food pairing
It pairs perfectly with roasts and game, where the wine’s structure supports succulent meats and long-cooked dishes. It is also suitable alongside medium-aged cheeses, sliced meats and cured products thanks to the savoury element that cleanses the palate and the fruity profile that harmonises well with spicy notes. Honouring Tuscan tradition, it is also an excellent match with meat-based dishes and richly flavoured first courses to bring out robust tastes.
When to serve it
It is ideal for enriching lunches and convivial dinners when you want a well-balanced and immediately approachable red wine, able to accompany a meal across a variety of occasions. Served throughout the year, it shows excellent gastronomic versatility during cooler seasons, especially alongside hearty meat main courses. Thanks to its wood ageing, this red can develop positively if stored in bottle for several years and gives its best in the medium term, when the fruit component and smoothness are fully enjoyable.
