Description
Claudio Mariotto, in the ‘90s, believed in the potential of Timorasso, an almost vanished native Piedmontese grape variety, to create a great age-worthy white wine. The winery, founded in 1921, is located in Vho, in the Colli Tortonesi, a historic area for viticulture thanks to its favorable climate and calcareous-clay soils.
This Colli Tortonesi Derthona is made from Timorasso grapes grown between 250 and 300 meters above sea level. After gentle pressing and spontaneous fermentation at controlled temperature, the wine ages for one year on the fine lees in stainless steel with bâtonnage and for at least six months in bottle, enhancing complexity and structure.
Bright straw yellow in color, it opens on the nose with aromas of ripe fruit, chamomile, and flint. On the palate it is fresh and saline, with vibrant minerality and a perfect balance of structure and finesse. The rediscovery of Timorasso has confirmed its extraordinary aging potential and its unique oenological identity.
Ideal with fish dishes, shellfish, and soft cheeses.
