Description
Claudio Mariotto, in the 1990s, believed in the potential of Timorasso, an almost extinct native Piedmontese grape variety, to create a great aging white wine. The winery, founded in 1921, is located in Vho, in the Colli Tortonesi, a historic region for winemaking thanks to its favorable climate and chalky-clay soils.
This Colli Tortonesi Derthona is made from Timorasso grapes grown at altitudes between 250 and 300 meters above sea level, without the use of pesticides. After a gentle pressing and spontaneous fermentation at controlled temperatures, the wine ages for a year on its noble lees in steel with bâtonnage and for at least six months in the bottle, enhancing its complexity and structure.
With a brilliant straw-yellow color, it releases scents of ripe fruit, chamomile, and flint on the nose. On the palate, it is fresh and sapid, with a vibrant minerality and a perfect balance between structure and finesse. The rediscovery of Timorasso has confirmed its extraordinary aging capacity and its uniqueness as a wine.
Ideal with seafood dishes, shellfish, and soft cheese.
