What kind of wine it is

Franciacorta Extra Brut Blànc by Contadi Castaldi is aged according to the rigorous Traditional Method. Resulting from a careful blend of Chardonnay and Pinot Bianco, it is crafted from grapes harvested in high hillside vineyards. The stainless steel vinification process aims to preserve a clear definition of aromas, while extended aging on the lees shapes a crisp and elegant profile.

Where it comes from

The grapes come from Lombardy, within the Franciacorta region, from plots located on high hills. The vineyards, with an average age between twenty-five and thirty-two years, ensure great consistency in quality. The vines are cultivated using established training systems to ensure the growth of balanced clusters conducive to the final fruit definition.

How it is produced

Manual harvesting at the end of August precedes gentle pressing and fermentation in stainless steel. The wine matures for seven months in tank before undergoing the second fermentation of the Traditional Method. Maturation on the lees lasts from thirty-four to forty-two months. After disgorging, a few months of rest and the Extra Brut dosage define the character and the final structure of the glass.

Tasting notes

In the glass it displays a very fine perlage, indicating its prolonged maturation. The bouquet is clean, intertwining scents of yellow citrus, white flowers such as honeysuckle and broom, subtle hints of almond and a saline trace. On the palate, the marked freshness combines with pronounced chalky minerality, leading to a linear and dry finish that is fully in line with the style of the wine.

Food pairing

Excellent as an aperitif, this Franciacorta accompanies shellfish and delicate fish, as its sapidity balances the sweetness of the meats.
