Lazio IGT Mater Matuta 2014 Casale del Giglio

Mater Matuta is an international blend that pays homage to the Italic divinity of the aurora, to which the peoples who inhabited the Le Ferriere area - in the province of Latina - where the vines of Casale del Giglio live today were worshiped.

It consists of 85% Syrah and 15% Petit Verdot, vinified separately. The first is harvested after a short drying, while the second when it reaches maturity. They age individually in new barriques for a period of 22 - 24 months, followed by a further 10 - 12 months in the bottle.

It has an intense and deep ruby red color. The nose reveals notes of morello cherry and red fruit, balsamic notes, coffee and spices. The taste confirms the intense, dense and complex character, balanced by the tannic texture and acid finish. It persists in a long spicy trail.

To be combined with a fillet with green pepper.
