Vinification includes skin maceration and temperature-controlled fermentation with indigenous yeasts, followed by a lengthy ageing in oak barriques. Where it comes from

The grapes come from selected old vines located in the municipalities of San Marzano and Sava, within the historical area of Primitivo di Manduria. The vineyards are rooted in soils featuring red earth rich in iron oxide, a distinctive element of this Apulian territory. Significant temperature shifts favor a regular development of the grapes and contribute to concentration and aromatic ripeness, defining a broad flavor impression consistent with the style of a riserva. How it is produced

This red comes from grapes harvested in the second half of September, once full ripeness is reached. Alcoholic fermentation starts with indigenous yeasts at a controlled temperature to preserve aroma precision.
