Description

What kind of wine is it?

Zinfandel Old Vines The Wanted is a red wine made from Primitivo grapes, produced in Salento from vineyards that are 40 to 50 years old. It undergoes temperature-controlled fermentation in stainless steel and is partially aged on the lees and in American oak barriques. The style is soft and full-bodied, with a solid structure and supple tannins. The balanced palate leads to a long finish, delivering ripe fruit well outlined by the measured influence of oak.

Where does it come from?

Its origin lies in Apulia, in the Salento area, a region renowned for viticulture. Falling under the Apulia denomination, it benefits from a Mediterranean climate that ensures consistent ripening, leading to a late August harvest. The use of these old vineyards guarantees a concentrated style. The local character translates into a marked body and a clear fruity profile, harmoniously integrated during maturation.

How is it made?

Grapes harvested at the end of August are destemmed and used for a whole berry fermentation. After the initial fermentation, the must is separated from the skins and continues processing in temperature-controlled stainless steel tanks with selected yeasts. Aging on the lees adds volume, while the subsequent separation of the batch ensures clarity: part matures in American oak barriques and the rest remains in steel to preserve the fruit definition.

Tasting notes

In the glass, it reveals an intense ruby red and deep color. The nose offers clear aromas of cherry and blueberry, enriched by spicy hints of coconut and vanilla originating from the oak. On the palate, it stands out as a soft and full-bodied wine, supported by a network of well-balanced tannins that give it structure. The harmony between fruit and body is resolved in a long and consistent finish.

Food pairings

This red pairs well with hearty meat main courses, balancing their succulence and intensity. It also matches perfectly with aged cheeses, where the wine's sweet oak notes complement the saltiness. For a taste of local tradition, pair it with Apulian recipes such as brasciole in tomato sauce and roasted lamb, for an ideal synergy between the dish's body and the wine’s lingering finish.

When to serve

Perfect for meals rich in structured courses, it is the ideal choice for those seeking a full and round wine. Serve at red wine temperature to enhance its fruitiness and gustatory balance. Thanks to its time in stainless steel and American oak barriques, it shows well even after a short bottle aging, which helps to integrate the aromas. It is recommended for lively social occasions.
