Description
This Primitivo from the Doppio Passo brand is a tribute to Carlo and Maria Botter, who together founded the winery in 1928, building it Step by Step, day after day, working together to achieve a common goal.
The wine is a Primitivo made from 100% Primitivo grapes, harvested in two stages. Once in the cellar, the first batch of grapes is destemmed and vinified with 7-8 days of maceration on the skins. Alcoholic and malolactic fermentations take place in stainless steel tanks at controlled temperatures (25-27°C). The second batch of grapes is left on the vines for about 10 more days to allow for a late harvest; these grapes undergo traditional red wine vinification. The wine obtained from the first batch undergoes a second fermentation on the pomace of the second harvested grapes.
Intense ruby red in color, on the nose it reveals aromas of ripe red and black fruits, blackberry, and cherry. The palate is structured, with soft tannins well balanced by acidity.
Doppio Passo Primitivo pairs excellently with grilled white and red meats, steak with grilled vegetables, and aged cheeses.
