How it is produced
Harvesting involves a rigorous manual selection of the best bunches, a process that brings only healthy and perfectly ripe fruit into the cellar. After spontaneous fermentation, the wine matures for 35 months in French oak barrels, a long period that promotes harmony between the fruity component and the tannins. At the end of this phase, the wine rests in the bottle without any invasive interventions, thus maintaining a complex structure and a strong link to its Spanish territory.
