Simera by Castello Monaci is a white wine from Salento made exclusively from Chardonnay grapes. Its style is modern and technical, with temperature-controlled fermentation and lees aging to maintain a clean, fresh and smooth profile, with a lingering finish.

Where it comes from

This wine is produced in Salento, a region with a long-standing tradition of winemaking, and it interprets Chardonnay in a direct and distinctive way. The local character inspires a clear and linear expression, reflecting the concept of a modern white wine connected to the tradition of Castello Monaci.

How it is produced

Chardonnay grapes are harvested in the second decade of August. After a gentle pressing, the must is clarified through static cold decantation; fermentation takes place at 12–15 °C to preserve freshness and aromatic precision. The wine then rests on its own lees, with several bâtonnages before bottling, to offer roundness and a smooth mouthfeel.

Tasting notes

It displays a straw yellow color with greenish highlights. The nose is intense and focused on fresh fruit, with a clean profile consistent with the cold processing and controlled fermentation. On the palate it is fresh, enveloping and smooth, with remarkable persistence and an intriguing aftertaste.

Food pairings

At the table, it naturally pairs with appetizers and delicate first courses, when a white wine is desired that supports without overpowering. It is especially recommended with fish and shellfish, where freshness and softness find an immediate balance.
