Montenero by Abbazia Santa Anastasia is a Sicilian red wine obtained from a blend of Nero d’Avola and Cabernet Franc from biodynamic cultivation. Vinification is carried out with spontaneous fermentation by indigenous yeasts and a long maceration on the skins, followed by aging in concrete and French oak. The result is a full-bodied and structured profile, with present tannins and a well-integrated spicy and balsamic component.
Where does it come from
The grapes come from Castelbuono, in Sicily, from the Abbazia Santa Anastasia vineyards on the Montenero hill at an altitude of 500 meters above sea level. The hillside position and elevation ensure slow ripening and provide balance and flavor definition. The connection with the territory and biodynamic management contribute to a consistent, intense, and measured style.
How is it produced
Production follows a traditional red vinification in oak vats, with controlled temperatures and spontaneous fermentation conducted by indigenous yeasts for about twenty days. Skin maceration lasts thirty days. After racking, the wine matures for two months in concrete tanks, then completes malolactic fermentation in first and second-passage Allier French oak barriques. Aging continues for twenty-four months in barrique and is completed by twelve months in bottle.
Tasting notes
Intense ruby red to the eye, with a deep and compact hue. On the nose it offers powerful and austere sensations, with hints of forest floor, moss, and red fruit, followed by vanilla, licorice, and coffee. The spiciness is well defined, with cinnamon and mace flower. On the palate it is vigorous and broad, with a velvety texture and present tannins supporting the spicy aromas and a long, consistent finish.
Food pairings
Montenero pairs naturally with red meats, game, and wild game, thanks to its structure and tannic weave. It is also recommended with risottos and main courses with rich flavors, where intensity and spice find continuity. It goes well with meat ragouts and pasta with concentrated sauces, maintaining a balance between power and precision.
When to serve
This is a red suitable for moments when structure and intensity are sought after, ideal at the table with hearty main courses or on occasions dedicated to tasting. The long aging in wood and bottle also makes it suitable for consumption after further rest, when spice and tannins may integrate even more. Served at a moderate temperature, it clearly expresses fruit, spice, and depth.
