What kind of wine is it?
Soave Colli Scaligeri by Sandro De Bruno is a structured white wine made exclusively from Garganega grapes. Specific winemaking practices and extended aging on the lees enhance the quality of the grapes and deliver a smooth, enveloping sip. The winery’s choices define an intense aromatic profile to ensure purity and balance from vinification through to consumption.
Where does it come from?
The grapes are sourced from the Colli Scaligeri subzone, located within the wider area of Soave and the Monti Lessini. This peculiar hilly territory is distinguished by continuous stretches of volcanic soils, characterized by basaltic rocks. This geological matrix imparts a solid mineral imprint to the wine, precisely reflecting the physical characteristics and viticultural vocation of these heights.
How is it produced?
Harvest takes place during the third week of September. In the cellar, the destemmed grapes undergo a cold skin maceration in a closed press for at least 12–18 hours, followed by gentle pressing. After proper decantation, the must starts fermentation in steel tanks. The process is completed with a crucial lees aging of 15–18 months, which decisively enhances the wine’s taste structure.
Tasting notes
To the eye, it appears as an inviting straw yellow. The bouquet opens with floral notes of orange blossom and jasmine, followed by hints of ripe exotic fruit, apricot, and orange zest. In the background, clear notes of aromatic herbs, beeswax, and flint emerge. On the palate, it is immediately structured and enveloping, accompanying the tasting experience with a long finish.
Food pairing
The wine’s substantial presence on the palate makes it a reliable and versatile match. It pairs precisely with baked fish en papillote and complements its delicate aromas thanks to its substantial texture. It also works well with flavorful savoury pies. Finally, serving it chilled highlights its qualities alongside rich charcuterie boards, as it tempers their natural saltiness.

This is the right bottle when looking for a satisfying white wine to serve with a meal. It’s best enjoyed at a controlled temperature and benefits from a few moments in the glass to fully release its aromatic potential.
