Soave Superiore DOCG Tufaie 2015 Bolla
Description
The Soave Superiore Classico Tufaie was born in the vineyards of the Bolla company in Monteforte d'Alpone, in the province of Verona. The name recalls the ancient quarries of Tufo from which the Venetian capital was surrounded.
This wine is mainly obtained from Garganega and Trebbiano di Soave grapes, harvested by hand in the first ten days of October. After destemming, the berries macerate at a controlled temperature for a few hours, then move on to the pressing phase. The must obtained, cleaned by static cold sedimentation, is left to ferment slowly and at low temperatures. The wine remains on the fine fermentation lees for a long time with regular "batonnage", while a small part ages in French oak barrels. Bottling follows in March and 2 months of bottle aging.
The Tufaie di Bolla is characterized by a straw yellow color with golden shades. The nose shows excellent complexity and finesse, with primary hints that recall the flowers of hawthorn and sambuca, to which are added notes of ripe white pulp fruit. In the mouth it shows a good body, soft and persistent, with mineral sensations that perfectly combine with the sweet ones, typical of Soave.
Excellent with shellfish and fish dishes, it also goes perfectly with white meats such as chicken or turkey.
