What kind of wine is it
This white wine from Alto Adige is a pure Sauvignon Blanc, made from hand-picked grapes from the region’s vineyards. It stands out for its distinctive aromatic profile, combining clear freshness with good structure. Fermentation takes place slowly at a controlled temperature in stainless steel tanks. Afterwards, it rests on fine lees and is split between steel and large wooden barrels. This process achieves a precise balance, enhancing the character of the grape variety and offering a clearly fruity expression.
Where it comes from
The wine originates in Alto Adige, a region particularly suited for viticulture. Manual harvesting and careful selection in the vineyard ensure only grapes of perfect quality reach the cellar, key to achieving optimal aromatic clarity.
How it’s made
In the cellar, production starts with a gentle whole bunch pressing, followed by natural settling of the must. Fermentation occurs slowly at a controlled temperature in stainless steel tanks to preserve primary aromas. This is followed by maturation for five to seven months on the fine lees, partly in steel and partly in large wooden barrels. This cellar technique balances the wine’s vivacity with a more rounded structure. The final blending takes place about a month before bottling.
Tasting notes
In the glass, it displays a beautiful, bright straw yellow colour with subtle greenish hues. The aroma is broad and layered, filled with clear notes of ripe apricot, mandarin, and passion fruit, intertwined with hints of elderflower, nettle, and mint. On the palate, the fruity character found on the nose is confirmed, supported by a lively freshness that guides and cleanses. The finish is satisfying and well-structured, accentuating the balsamic and vegetal nuances.
Food pairing
At the table, it pairs perfectly with regional dishes such as white asparagus with Bolzano sauce, balancing the vegetable element of the dish. It is also very suitable with classic nettle dumplings, thanks to the natural herbal undertone in the wine. In addition, it harmonises beautifully with preparations of raw and marinated fish, including tuna carpaccio, smoked salmon, and raw scampi. Its pronounced fruitiness and good flavour tension allow it to complement both delicate and intense flavours.
