Description

What kind of wine is it?

Adler von Klausen’s Sauvignon is a fresh white wine that faithfully reflects the characteristics of its homeland in Alto Adige. Made exclusively from Sauvignon grapes, it offers an intense and balanced aromatic profile, combining natural liveliness with a pleasing smoothness on the palate. Its clean, linear structure makes it a pure and immediate varietal expression, ideal for those who appreciate the balance found in mountain wines.

Where does it come from?

This white wine is born on the sunny south-eastern slopes of the Valle Isarco, set amidst a fascinating alpine setting. The vines thrive at altitudes of between 450 and 750 meters, benefitting from conditions that encourage a slow and steady ripening of the grapes. The alluvial soils are notable for their depth and richness in porphyric sediments, key elements for promoting harmonious plant growth and an intense concentration of aromas.

How is it produced?

The cellar process aims to protect the delicacy of the original aromas, beginning with a gentle pressing of the grapes to obtain very pure musts. Fermentation takes place in stainless steel tanks at controlled temperatures to ensure a well-defined aroma profile. To enhance the structure and deliver greater roundness, the wine rests on its fine lees, while the complete exclusion of malolactic fermentation preserves its natural freshness on the palate.

Tasting notes

In the glass, it shows a bright greenish-yellow color that aligns with its lively character. The aromatic profile opens with a distinctive bouquet, marked by clear herbaceous notes and a recognizable hint of blackcurrant. On the palate, it is dry and typically varietal, offering a tasting experience where a measured aromatic persistence accompanies a linear, harmonious finish that balances both the wine’s softer and livelier components.

Food pairings

The clear identity of this white makes it an excellent aperitif and a reliable companion at the table. It pairs delicately flavored dishes and especially enhances recipes featuring asparagus and snails. Its balanced structure complements seafood dishes without overpowering them, making it particularly suitable for pairing with steamed fish or grilled preparations.

When to serve it

This label is well-suited for occasions focused on vegetables and fish, as it delivers a straightforward and precise sip. Thanks to its exclusive maturation in steel, it is designed for young consumption, when its aromatic strength is at its clearest. Served well-chilled, it ensures a tasting experience marked by notable clarity and liveliness, ideal for those seeking a dry wine with a vibrant aromatic profile.
