Where it comes from

This wine originates from the tenuta Suor Marchesa, located in Riesi, in the municipality of Butera, at the heart of Sicily and a short distance from the coast. The particular geographical location ensures constant exposure to winds, set within a microclimate characterized by hot summers and mild winters. In this environment, the vine thrives, while the closeness to the sea and continuous ventilation promote a pronounced sense of minerality and freshness in the overall profile of the white wine.

How it is produced

Harvest takes place around mid-September, waiting for the perfect ripeness of the bunches. In the cellar, the grapes undergo a gentle pressing to extract only the free-run must. Fermentation continues for over ten days at a constant sixteen degrees in stainless steel tanks. The subsequent aging on the fine lees lasts for two months, again in stainless steel, a production choice aimed at providing structure and smoothness to the wine without interfering with the grape’s aromas.
