What kind of wine is it
Pievasciata bianco is a pure Chardonnay from the young estate Vallepicciola. Its style aims for freshness and salinity, with a delicate aromatic profile built around floral notes and yellow-fleshed fruit. It’s a white conceived to grace the table, especially seafood dishes.
Where it comes from
The grapes come from the vineyards of Vallepicciola, located in the area of Pievasciata, in the municipality of Castelnuovo Berardenga, in the province of Siena, Tuscany. The estate manages 105 hectares of vineyard following the principles of sustainable agriculture. This approach in the vineyard aligns with the Sienese territory’s vocation for quality viticulture.
How it is made
The harvest of the Chardonnay grapes usually takes place in the second half of August. In the cellar, the grapes are first destemmed and crushed, followed by a gentle pressing and a static settling in steel for twelve to twenty-four hours. The alcoholic fermentation always takes place in steel at controlled temperature and is followed by bâtonnage and aging on the fine lees for three months. The wine then spends two months in bottle before release.
Tasting notes
In the glass, the wine shows a straw-yellow color. On the nose, delicate aromas of peach blossom, yellow peach, and apricot appear, together with hints of almond. The palate is fresh and saline, with medium length, in line with the aromatic profile perceived on the nose.
Food pairing
Pievasciata bianco is perfect with hot seafood starters, seafood risotto, and grilled fish. Its salinity and freshness make it a natural partner for seafood cuisine, able to support even flavorful dishes without being overbearing.
When to serve it
Thanks to its freshness and salinity, this Chardonnay is best served well chilled, in keeping with its delicate aromatic character. It is ideal to open a fish-based meal or to accompany it throughout. Its easy-drinking nature also makes it suitable as a refined aperitif.
