Testamatta by Bibi Graetz is a white wine with a fresh and complex profile, produced exclusively from Ansonica grapes. This wine reflects the elegant and distinctive style of its Tuscan denomination, balancing vibrant acidity with a structured texture. The meticulous aging in stainless steel and barriques enriches the drinking experience, offering depth and aromatic precision in every sip.
Where it comes from
The vines that give life to this white grow on the well-tended terraces and ridges of the municipality of Fiesole, located in the hills of Tuscany. The growing area overlooks the city of Florence and benefits from optimal exposure and a unique microclimate that favors maturation. The soils of this hilly area impart a distinctive mineral imprint, anchoring the wine's identity to its territory.
How it's made
Production begins with meticulous manual harvesting of the grape clusters. In the cellar, the grapes undergo dry ice treatment and a brief skin contact of one hour, essential for extracting primary components. This is followed by fermentation in temperature-controlled stainless steel vats. Subsequently, the wine ages in barriques for twelve months before bottling, gaining additional smoothness.
Tasting notes
In the glass, it displays an inviting, intense, and bright straw yellow color. The nose opens with pronounced fruity aromas of golden apple and yellow peach, well integrated with a mineral vein that defines its aromatic clarity. The palate is enveloping and layered, accompanied by excellent balance. The finish is elegant and persistent, leaving a pleasant sensation consistent with its precise refinement.

Thanks to its natural freshness and structure, it perfectly complements flavorful seafood cuisine and fish dishes with bold flavors. It also pairs very well with white meats, such as classic roast chicken enhanced by aromatic herbs.
