Description
What kind of wine is it
Sangioveto by Badia a Coltibuono is a red wine made predominantly from Sangiovese, complemented by other native grapes from the Chianti area. The result is a red with great structure and character, capable of authentically expressing the identity of its production area.
Where it comes from
The grapes come from vineyards located in Gaiole in Chianti, at an altitude between 260 and 370 meters above sea level. The vineyards grow on medium-textured calcareous clays and are trained to Guyot, a system that promotes balanced ripening of the clusters.
How it’s made
Vinification involves natural fermentation with indigenous yeasts, followed by a four-to-five-week maceration on the skins with punch-downs. The wine ages for twelve to sixteen months in French oak barriques, 10% of which are new, and completes maturation with at least six months of bottle aging.
Tasting notes
To the eye it shows an intense, deep ruby red with purple highlights. The nose reveals pronounced floral notes of violet and iris, accompanied by spicy hints, red fruits, vanilla and clove. On the palate it is structured, harmonious, dry and savory, with well-balanced acidity, good tannic structure and a round, persistent texture that becomes more supple with evolution.
What to pair it with
This wine pairs particularly well with ribollita, beans, game and stews. It also makes an interesting match with well-aged cheeses and with chocolate, where its tannic structure and aromatic persistence stand up to intense flavors.
When to serve it
It is a wine suited to the more substantial dishes of Tuscan cuisine, where its structure and balanced acidity can accompany both simple and elaborate dishes. It also works well to end the meal alongside chocolate, for a finish with great character.
