Description

What kind of wine is it

Soffocone di Natale di Bibi Graetz is a Tuscan red wine with a captivating profile, originating from a blend of Sangiovese, Canaiolo, and Colorino grapes. It is a well-structured wine, defined by a smooth character underpinned by well-integrated tannins. The winemaking process starts with an initial fermentation in stainless steel tanks at controlled temperature, enhanced by daily punch-downs. The subsequent aging in wood refines a precise style, ensuring a smooth and easy drinkability that is pleasantly round.

Where does it come from

This red wine originates from vineyards located in the municipality of Fiesole, set on the charming hills directly overlooking the city of Florence. The wine area benefits from a unique hilly environment, able to impart a strong local character to the fruit. Its classification as Toscana allows the Sangiovese’s character to be fully expressed, alongside Canaiolo and Colorino. This deep connection to Fiesole clearly and transparently defines the origin of the label.

How is it produced

The Sangiovese, Canaiolo, and Colorino grapes undergo fermentation in temperature-controlled stainless steel tanks. During this stage, daily punch-downs are carried out, essential for effective contact between the must and skins and to manage optimal aromatic extraction. After fermentation, the wine is aged in barriques for 15 months. This technical and straightforward process is completed with bottling, to stabilize the final organoleptic profile.

Tasting notes

It displays an intense ruby red color, indicating a strong chromatic concentration. The nose reveals clear aromas of wild berries, perfectly balanced with elegant spicy notes reminiscent of cocoa, thanks to its time in barrique. On the palate, it unveils a pleasantly soft texture, supported by a balanced tannic structure that accompanies the entire tasting journey. The finish is clean, confirming harmony between the fruity component and sweet spice echoes.

Food pairing

Its softness and well-integrated tannins make it ideal to pair with red meat dishes and flavorful game preparations. It's also excellent with selections of aged cheeses, where the solid structure of the wine perfectly supports the intensity of the food. From a Tuscan perspective, the most natural gastronomic pairing is with the classic bistecca alla fiorentina or a hearty wild boar stew, to enhance the succulence of the meat and the rich notes of the sauce.

When to serve it

This label is perfect for accompanying generous lunches and dinners, where a round wine is needed to support flavorful dishes. It shines at its best when chosen as the main wine of the meal, highlighting its aromatic elegance and pronounced cocoa notes. It finds its ideal setting during convivial occasions and menus featuring richer dishes. Its perfect balance makes it a reliable presence for an impeccable wine to accompany the entire meal.
