Description

Sancaba is a Tuscan red wine made from pure Pinot Noir, grown at an altitude of 650 meters on the hills around San Casciano dei Bagni. This setting enhances finesse, freshness, and expressive precision, with a limited production that reflects a handcrafted approach and a keen focus on grape quality.

Vineyard management focuses on maintaining the plant's balance and achieving full grape ripeness, while the harvest is carried out with care to preserve the fruit's integrity, crispness, and aromatic tension. Vinification involves fermentation for 10 days, partly in stainless steel and partly in large barrels. Aging takes place in large barrels and second-use barriques, finishing in concrete vats.

In the glass, it displays a refined and dynamic profile, with clear red fruit, floral sensations, and a well-defined mineral structure; on the palate, it is tense, fresh, and harmonious, with fine tannins, good depth, and a precise, persistent finish.

It pairs well with roast white meats, duck, mushrooms, pasta with delicate ragù, and medium-aged cheeses.
