What kind of wine is it?

Ororosso di Cembra is a Traditional Method sparkling wine made from Chardonnay grapes in the Trentino valley. Crafted in the strict Zero Dosage style, it boasts a dry, crisp, and savory profile. Winemaking involves gentle pressing, static cold settling, and temperature-controlled fermentation. Bottle aging delivers a fine perlage and harmoniously integrates fruit expressions with yeast-derived notes.

Where does it come from?

It is produced in the classic area of the Cembra valley, in the heart of Trentino, a region with a historical vocation for Traditional Method wines. The mountain climate, marked by significant temperature swings, ensures freshness and high aromatic precision. The local soils favor a defined structure and a distinctly savory character. Its inclusion in the Trento denomination reaffirms the regional tradition of extended sparkling wine maturation.

How is it made?

The Chardonnay is hand harvested between late August and early September. After gentle pressing and temperature-controlled fermentation, the base wine spends six months in stainless steel. Secondary fermentation follows the Traditional Method, with a crucial bottle aging period of forty-eight months, guaranteeing fine perlage and remarkable aromatic depth.

Tasting notes

In the glass, it reveals a bright straw-yellow color, enlivened by a fine and persistent perlage. The nose offers aromas of ripe yellow fruit, accompanied by subtle hints of barley and pastry from lees aging. On the palate, the entry is dry, driven by pronounced sapidity and an unbroken linear progression. The finish lingers with consistent yeast notes, highlighting the Zero Dosage style.
