Description

The Cuvée del Fondatore is the highest expression of prosecco in the Ca' di Rajo production. The low sugar content allows to convey the essence of the characteristics of the territory.

It is made with a very soft pressing of the Glera grapes. After fermentation, the second fermentation takes place in a pressurized tank with the Charmat method lasting 70–90 days.

It is characterized by a bright straw yellow colour with greenish reflections and a very fine and persistent perlage. Intense notes of acacia flowers on the nose alternate with delicate fragrances of apple, lemon and grapefruit. Soft and tangy on the palate, it stands out for its harmony and structure.

Ideal bubbles both in opening, as an aperitif, or to be proposed in combination with dessert.
