Description

What kind of wine is it

Valpolicella Classico Superiore Collezione Pruviniano by Domini Veneti is a red wine that embodies the character of the Classic Valpolicella region. Made from grapes grown in Prognol, it stands out for its dry, fresh, and balanced style. The texture is lively and smooth, defined by precise vinification. Maturation between steel and bottle ensures a clean and consistent profile, making this label a faithful expression of its region of origin.

Where does it come from

The grapes are sourced from vineyards located in the Prognol district, at the heart of Classic Valpolicella. These lands, known by the ancient place name Pruviniano, give the wine its distinctive personality. The estate’s plots blend perfectly into the hilly Veronese landscape, where they benefit from ideal conditions. The unique qualities of this soil highlight the wine’s territorial provenance, strongly rooted in the winemaking heritage of Domini Veneti.

How is it produced

Harvest takes place between September and October. Destemming initiates fermentation with a ten-day skin maceration at a controlled temperature of 25-28 °C, a process that optimally extracts colour and aromatic fractions. Ageing in steel is followed by a twelve-month bottle rest, shaping the wine’s structure before it reaches the glass.

Tasting notes

In the glass, it displays a ruby red hue with good clarity. The bouquet opens with a distinct floral note dominated by violet, followed by fruity aromas of currant and intriguing spicy nuances of black pepper and nutmeg. On the palate, it is dry and lively, supported by a well-perceived freshness that balances its structure, leading to a pleasantly tidy and clean finish.

Food pairings

This red wine pairs easily with typical dishes from Veronese cuisine. Its vibrant freshness and balanced profile make it perfect for enhancing a plentiful meat and cured meats platter. It is an excellent match for traditional recipes, where the wine’s spicy notes complement the seasoning of first courses. It’s also ideal alongside flavourful dishes that are not overly structured.

When to serve it

It is the ideal choice for everyday occasions and informal lunches. Thanks to twelve months of bottle ageing, it already presents a composed aromatic profile, allowing for quick serving without prolonged waiting. It easily accompanies a complete meal, from starters to main courses. Its innate smoothness ensures a pleasant drink that remains satisfying and lively from beginning to end.
