Description
The Valpolicella Ripasso Classico Superiore Solane was born in the Veneto vineyards of the Santi company, near Verona.
This wine is mainly made with Corvina Veronese grapes and with Rondinella grapes, harvested manually in the first ten days of October. The vinification takes place separately, with 15 days of maceration and numerous pumping over to highlight the peculiarities of the grapes. Using an ancient technique, part of the wines referments on partially dried grapes, to amplify the fruity aromas and soften the tannins, while the rest is reserved for the production of Amarone. After assembling the grapes, the wine is left to evolve in barriques and, subsequently, in large barrels, for a total aging period of about 15 months. Bottle refinement follows.
The Valpolicella Ripasso Classico Superiore Solane shows a deep ruby red color. The nose carries a scent of fresh red fruit, with sweet hints of marasca jam and vanilla. In the mouth it is a wine of great character and structure, with a good flavor and an elegant balance. In the final it leaves persistent spicy sensations.
It marries divinely with important dishes based on red meats and game. It is excellent with well-aged cheeses.
